The kitchen is the front of the house here.

L'Hirondelle opened on Scotland Road because the neighborhood was missing a place where you could eat tasso the way it is cooked back home. The chef is from Haiti. Nothing comes out of a bag.

Pots stay on the stove from the time the doors open. The pikliz jar gets refilled, the rice never really stops. Portions are generous on purpose, so nobody leaves the table still hungry.
